In version 1.2 on PC, Le Mans Ultimate has added native, in-game telemetry recording which exports to a DuckDB file.

Setting up telemetry recording

You can either set up telemetry to record automatically in "gameplay" settings or map a button to start recording in your control bindings - there is not one set by default.

When on-track, you will see that the "Telemetry recording started" text appears above the tachometer on the right-hand side when telemetry recording is active.

Configuring channel recordings

In UserData/Telemetry you can find a config.json file. You can configure this file in order to remove some channels/events from the list of recorded data or increase/decrease their frequency but this may have some performance implications.

Inspecting duckdb data

From this link you can download a duckdb extension DuckDB CLI | MotherDuck Docs 
Extract the downloaded version, open a terminal and run duckdb -ui

Your browser should then open automatically a new tab with the duckdb viewer from where you can load the telemetry data.

It is possible to convert this DuckDB format as required but this feature is not directly supported by Studio 397.
